Bebinca, also known as ‘Bibik’ is a well-liked treat in Goa and a classic Indo-Portuguese dessert. The name of this dish comes from the belief that Sister Bebiana, a nun from the cloistered Augustinian convent at Convent Da Santa Monica, developed it which symbolized the seven hills of Lisbon and old Goa. It's a pudding with several layers that can be made up to sixteen, though some people like it with just the traditional seven layers. It is regarded as the ‘queen of Goan desserts’ and has a special place in Goan cuisine as a classic dessert. Its preparation is entrenched in ancient customs and continues to be a vital component of all Goan celebrations. This iconic dessert is now recognized with Geographical Indication (GI) tag, preserving its authentic Goan identity.

Made using clarified butter, milk, sugar, egg, and flour, Bebinca is the most delightful dessert. Subtle, Soft, and Sweet taste makes it unique from others. Process: Unrushed and Unfiltered

Before modern methods, Bebinca was prepared in ovens (either coal or wood style ovens). Previous methods were time-consuming, it used to take around 7 to 8 hours to prepare authentic Bebinca. Today in Goa, Most restaurants and Hotels prepare Benica in a modern style with modern equipment. Even though the process is now quick and easy, the ingredients have never changed. A smooth batter is prepared and cooked layer by layer using Ghee.

As we know, Bebinca is the most eye-pleasing dessert; even on a simple plate, it looks well presented, elegant, and classy. Most chefs present Bebina in a way that perfectly showcases its layered structure. Most people love pairing Bebinca with ice creams and other drinks. With ice creams, layers of Bebinca and ice cream collide in the most extraordinary way.
