Bebinca, also known as ‘Bibik’ is a well-liked treat in Goa and a classic Indo-Portuguese dessert. The name of this dish comes from the belief that Sister Bebiana, a nun from the cloistered Augustinian convent at Convent Da Santa Monica, developed it which symbolized the seven hills of Lisbon and old Goa. It's a pudding with several layers can be made upto sixteen, though some people like it with just the traditional seven layers. It is regarded as the ‘queen of Goan desserts’ and has a special place in Goan cuisine as a classic dessert. Its preparation is entrenched in ancient customs and continues to be a vital component of all Goan celebrations.
