Bundelkhand Kathiya Gehu is a durum wheat variety (Triticum durum) cultivated in the semi-arid Bundelkhand region of Uttar Pradesh and Madhya Pradesh. Known for its amber-colored grains, high fiber, and nutritional richness, it is used to make daliya, pasta, vermicelli, and crispy rotis with excellent shelf life.
